Zucchini Quick Casserole       Print print

4 cups cubed raw zucchini                   
1 cup carrots - cut up       
1 small onion                                                                                1/4 cup green pepper, chopped

 

Cook above items until tender.  Add salt and pepper to taste and drain. Then combine with ingredients below

 

4 oz. cream cheese
2 cups croutons
1/2 cup milk
4 oz. sour cream
1 can Cream of Chicken soup

 

Mix all together and bake at 350 degrees in a 9 x 13 inch pan for 35 - 40 minutes.  Sprinkle bread crumbs on top.
